Perronelle's Blush

Perronelle's Blush

This recipe reflects the joy and satisfaction Perronelle Chevallier, a renowned forager and long time Aspall matriarch, took from harvesting the blackberries in the hedgerows around the orchards at Aspall.

Salmon pink in colour, Perronelle's Blush has an excellent nose comprising a floral, appley and fruit aroma. Attractive apple & blackberry flavours define a sweetish palate, with good acid balance and a long finish of soft fruit flavour, and blackberry tones that enhance the finish

An ideal aperitif in place of sparkling rose, and as a partner to fruit based desserts such as tarte au citron and gooseberry crumble with fresh cream.

Organic

Organic

Our Organic cyder pays homage to the founder of Aspall, Clement Chevallier. This cyder has a higher bittersweet apple content than all our others, so is much closer in style to his cyder of the 1700's.

It has an attractive golden colour; a marked fruity aroma of traditional bittersweet cyder apple, with floral and spicy overtones. The palate is rich, initially full and slightly sweet, with a good balancing acidity and a pronounced astringency followed by a very long dry finish.

Organic Tasting Notes

Goes well with asparagus dishes. Also wonderful with strong cheddars, blue Stilton and ripe French cheeses. Very good with meaty, full flavored dishes.
