Aspall Organic Cyder Vinegar Leek Tart

Method →
  • Cheesy Shortcrust Pastry : 300g/10oz Organic wholemeal flour
  • 150g/5 oz unsalted butter
  • 1 tablespoon wholegrain mustard
  • 100g/5oz grated Parmesan cheese
  • 1 medium egg
  • 1 tbspn Aspall Organic Cyder Vinegar
  • Tart : 4 medium sized leeks sliced thinly
  • 2 tbspns Aspall Organic Cyder Vinegar
  • 1 medium egg
  • 1 tbspn mayonnaise
  • 1 tbsopn wholegrain mustard
  • 4 tbspns crème fraiche
  • 1 tbspn Parmasen cheese grated


1. Place the flour, unsalted butter grain mustard, parmesan cheese, egg and Cyder Vinegar in a food processor, and mix into a soft dough adding a little water if required.
2. Remove and knead lightly and roll out a deep pan pizza style base raising a shallow rim around the outside or line a flan dish or tin.
3. Preheat the oven to 175 c/ Gas 4.
4. Sprinkle the leeks with 2 tbspns of Aspall Organic Cyder Vinegar and steam gently for 3 minutes.
5. Place the leeks in the centre of the pastry.
6. Mix the beaten egg the mayonnaise, grain mustard and crème fraiche and pour over the leeks.
7. Sprinkle with the parmesan cheese and freshly ground black pepper. Bake for approx 20- 25 minutes and serve with a tossed green salad.
