Vegetarian Stew

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 1 carrot, chopped
  • 1 leek, chopped
  • 1 tbsp tomato puree
  • 400g canned chopped tomatoes
  • 200g canned butter beans, rinsed and drained
  • 400g canned flageolet beans, rinsed and drained
  • 200ml Aspall Premier Cru Suffolk Cyder
  • 250ml hot vegetable stock
  • 1 tbsp fresh thyme leaves
  • Brown bread, to serve

Method:

1. Heat the oil in a large pan and fry the onion, garlic, carrot and leek until soft. Add the tomato puree, chopped tomatoes, all the beans, the Aspall Cyder, stock and thyme and simmer for 15-20 minutes.

2. Serve with fresh brown bread.
