Following our recent post about the rising popularity of vinegar cocktails, our friends at Sipsmith and The Orange Tree in Richmond have shared some recipes for creating your own vinegar cocktails at home - enjoy!

How to make your own Shrub

A shrub is so simple to make.  We have included three flavour combinations for you to create before mixing with a combination of spirits to make your own delicious vinegar cocktail...

  • Raspberry & Apple Balsamic Shrub


    What you need:

    • 500g Raspberries
    • 500ml Aspall Apple Balsamic Vinegar

    How to do it:

    1. Boil together the Apple Balsamic Vinegar and raspberries, then strain.
    2. Return to the pot, adding 250g caster sugar.
    3. Bring to boil and simmer for 2 minutes.Allow to cool, sieve again then bottle.

  • Orange Shrub


    What you need:

    • 400g Oranges
    • 200g Aspall Cyder Vinegar
    • 100g sugar
    • 100g water

    How to do it:

    1. Combine the water, fruit & sugar, cover and simmer for 30 minutes.
    2. Strain out orange and add the cyder vinegar.
    3. Allow to cool, then bottle.

  • Beetroot & Lemon Shrub


    What you need:

    • 5 cups water
    • 2 tablespoons Aspall White Wine Vinegar
    • ½ cup sugar
    • 1 cup beetroot juice
    • 1 cup fresh lemon juice

    How to do it:

    1. Whisk ¾ cup water, vinegar and sugar until sugar dissolves.
    2. Combine remaining water, beet juice and lemon juice.
    3. Stir in vinegar.
    4. Sieve and allow to rest for at least 24 hours.

Vodka, Cointraeu, Apple Balsamic Vinegar, Elderflower cordial, Soda Water

Bells of St.Clements
Dry shaken egg white, 40ml Gin, 10ml Damson, 25 Orange Shrub (recipe above), 25ml Lemon Juice

Raspberry and Balsamic Collins
50ml Gin, 25ml Raspberry Shrub (recipe above), Soda

Napoleon's Berry
25ml Cognac, 25ml Apple Balsamic, Strawberries

Cyder Martini
50ml Gin, 20ml Cyder vinegar

English Mule
Lime juice, 25ml Raspberry Shrub (recipe above), 5ml Apple Balsamic, ginger beer, 50ml vodka

English 75
25ml Gin, 20 Raspberry Shrub (recipe above), Prosecco top

Bleeding Heart Martini
Beetroot & Lemon Shrub (recipe above), Gin, Vermouth
