A fantastically quick and easy healthy stew recipe, but still rich in flavour. The beans makes this stew really hearty so perfect for a cold winter evening. Served with fresh brown and butter, this is real comfort food, vegetarian style.

1. Heat the oil in a large pan.

2. Fry the onion, garlic, carrot and leek until soft.

3. Add the tomato puree, chopped tomatoes, all the beans, the Aspall Premier Cru Suffolk Cyder, stock and thyme and simmer for 15-20 minutes.

4. Serve with fresh brown bread.
